The harvest at Château Vieux Maillet is carried out by hand, and the grapes then go through the “Tribaie”, which sorts the berries using densimetric baths according to their degree of ripeness. This initial selection ensures that the grapes in each vat are homogeneous, enabling the fermentation and maceration processes to be adapted.

A rarity in Pomerol, the Château Vieux Maillet winery has a terracotta amphora room.

One third of the wine is matured in new 225-litre barrels, one third in single-wine barrels and the remainder in amphorae to preserve the fruit. In addition to plot-by-plot vinification in small temperature-controlled stainless steel vats, 20% of the harvest is vinified directly in 500-litre barrels in a temperature-controlled room specially dedicated to this purpose. This unique blend provides an inimitable texture on the palate, a touch of tannin and a silky tannic structure.
